McCoy entered the draft ranked by MLB Pipeline as the No. 152 prospect and was ESPN's No. 156 prospect.

He committed to Tennessee on June 22, choosing the Vols over LSU and a return to South Carolina. If he were to make it to campus he would be a strong candidate to fit into Tennessee's starting rotation.

McCoy missed the 2026 season after undergoing Tommy John surgery for a torn UCL in his left elbow. Before his injury he was projected to be selected within the first two rounds.

McCoy made 14 starts as a sophomore in 2025, posting a 4-5 record, 6.90 ERA and 1.70 WHIP in 60 innings, striking out 77 batters while issuing 40 walks and 17 hit-by-pitches.
